Seneca Allegany Culinary Team is Tops
SALAMANCA, NY – The culinary team from the Seneca Allegany Casino & Hotel recently earned the “Best in Show” and “People’s Choice” awards at the American Culinary Federation (ACF) Buffalo Chapter’s fifth annual “Taste of Culinary” event, which featured 50 culinary teams throughout Western New York.
During the event, the Seneca Allegany chefs served:
~~ Pork Chili Verde – a slow simmered pork with green chilies, tomatillos, cilantro and fresh lime;
~~ Grilled Diver Scallop on an eggplant crisp with parmesan cheese and caponata;
~~ Boston Bibb Chopped Salad with cherry tomatoes, red onion, maple bacon and smoked cheddar ranch, and;
~~ Marinated Skirt Steak – grilled and served with baked polenta, balsamic caramelized onion, sweet peppers and fresh mozzarella.
Proceeds supported the Chef and Child Foundation, an organization that educates children and families about proper nutrition and fights against childhood hunger, malnutrition and obesity.
Leading the Seneca Allegany culinary team were Executive Chef Brian Mahony, Executive Sous Chef Mike Larson, Sous Chef Adam DiChristina, and Room Chefs Sean McAuley and Nathaniel Hamlett. The team helps oversee seven dining outlets at the Seneca Allegany Casino & Hotel, including Patria, The Western Door: A Seneca Steakhouse, Thunder Mountain Buffet, Seneca Café, Bear Claw Café, Fire Lounge and Seneca Café Express. The property first opened in 2004 and expanded to include a AAA Four-Diamond Award-winning hotel in 2007.
